What’s for dinner?

The age old question that everyone hates having to think of an answer to, especially if you’re the one in charge of planning dinners in your house! I am always looking for an easy and delicious dinner that I can whip up in 15 minutes or less. I have a rotation of meals, but am eager to find some new recipes to add into the routine meals that I make all the time.

I have made a list of 4 dinner’s that make up my go to recipes for the week! Please don’t hesitate to comment your own ideas on this post, because I am always looking for new recipes to cook for my family!

  • Tacos with my homemade seasoning
  • Healthy taco seasoning: ready in 5 mins!
  • 1 tsp salt
  • ¼ tsp oregano
  • ½ tsp paprika
  • 1 tbsp chili powder
  • 1 ½ tsp ground cumin
  • 1 tsp ground black pepper (red pepper flakes optional)
  • 1 lb of ground beef or turkey
  • Add chopped bell peppers and 1 onion

I make this recipe once a week, it is the fastest and most popular dinner in my house! I usually throw in the ground beef and add the seasoning straight to the pan, mix it altogether and there you have it! I add frozen peppers and onions from Trader Joes and my dinner is made! I use shredded cheese and avocado as toppings on my taco with soft tortilla shells that I heat up on the pan. I cook this in 5 minutes, once my husband is already home and we’re still able to feed the kids and get them into the bath at a reasonable time!

  • Bolognese Sauce
  • 1 lb ground beef or turkey
  • Little bit of butter (optional)
  • 2 chopped carrots
  • 2 large celery sticks chopped finely
  • ½ – 1 jar tomato sauce (whatever you have on hand)
  • 1 clove of garlic
  • 1 cup pasta water
  • Pinch of Salt, pepper, parsley, and basil (optional)

Throw all of the ingredients into the pan and let it simmer until the vegetables soften and the ingredients have blend together to form a sauce. Cook the pasta and serve! I like to make this early in the week, because it makes plenty of leftovers for lunches!

  • Gathered Nutrition’s Almond Butter Sauce
  • 2 tbsp almond butter (sub peanut butter)
  • 2 tsbp coconut aminos (sub soy sauce)
  • 1 tbsp filtered water
  • 2 tsp rice vinegar
  • 1 tsp siracha (optional if you like spicy)
  • ½ tsp sesame oil
  • Dash of sea salt

Add all the ingredients to a bowl and whisk or mix together with a fork until smooth! This is my FAVORITE easy sauce to make in a pinch! I chop up chicken breast, throw it in the pan, add any veggies and pasta/rice to make a stir fry. Then I typically double this recipe and throw it on top and dinner is served!

  • Baked Salmon
  • 1 lime (or lemon)
  • 2 tsp honey
  • 2 tsp spicy brown mustard
  • 1 tsp dried parsley
  • Pinch of garlic powder
  • Pinch of paprika
  • Pinch of salt and pepper

I combine all of the ingredients into a bowl and mix together. Then I pour the sauce over three pieces of salmon, typically about 1 pound worth. After that, I bake on 375 degrees for 25-30 mins. I usually prep this during my child’s nap and pop it in the fridge, that way I can easily throw it in the oven around 5:45pm. I make some rice and steam some frozen vegetables to go with it and there you have it  — dinner is ready!
